More Cool Treats for the Hot Summer: Watermelon Bombe

This is a great treat for those hot summer days. I especially like to serve it on the Fourth of July.

Watermelon Bombe
Serves 12
2 pints lime sherbet
1 quart raspberry or watermelon sorbet
1.5 c chocolate chips
1.Line a 3-quart metal mixing bowl with plastic wrap, and leave the edges overhanging. Place lined bowl in freezer for 10 minutes; this will be the mold.
2. Allow lime sherbet to soften at room temperature until it is spreadable. Remove chilled mold from freezer. Using a rubber spatula, coat inside of mold with all the lime sherbet i, making a 1-inch-thick layer. Return mold to the freezer for 30 minutes.
3. Allow sorbet to soften at room temperature until spreadable. Stir in chocolate chips. Remove mold from freezer. Pack sorbet into center, making an even layer. Return to freezer until completely hardened.
4.To serve, place a serving plate upside down on top of the mold. Holding plate against mold, invert both. Place a hot wet kitchen towel over the mold. Remove the metal bowl. Immediately before serving, remove the plastic wrap.
