a.k.a., Everything-But-the Kitchen Sink Frittata
Need to clean out your produce drawer? Have I got a recipe for you. This frittata recipe can handle most anything you can throw in. My blogger buddy Jess over at Notes from the Garden Spot of the World makes something similar, which she calls "Ugly Eggs". I'd go with that, but in this case, I think it's pretty! Pictured is fresh spinach (frozen or canned will also work), sliced red onion, and tomatoes and artichoke hearts (in the form of Trader Joe's tapenade), and minced garlic stirred up with my favorite farmers market eggs. No dairy in these, but if you don't have to worry about dairy allergies, whisk in about 1/2 cup organic whole milk to make the dish a bit fluffier and all the cheese you can handle. Dump it all in a cast iron pan sprinkled with some fresh ground pepper and a dash of sea salt and cook on medium high heat until firm - you may want to finish off the top on broil for a minute in the oven.
