What's for Dinner? 13 Bean TexMex with Polenta

I actually made this easy peasy lemon squeezy dish Meatless Monday and haven't gotten a chance to post it yet. Taste the rainbow! No, Skittles is not an ingredient, but isn't it so colorful? I usually like to include a little bit of poetry with my recipes, like the rosemary chicken or the lavender brownies. Herbs are the ingredients of poetry; but beans? All I can think of is "Beans, beans, good for the heart...." Sorry folks.
13 Bean Tex Mex on Polenta Recipe (GF, DF, Vegan)
So easy! So filling! So yummy!


13 Bean Tex Mex on Polenta Recipe (GF, DF, Vegan)


Ingredients:
13 Bean Soup Mix (I used Bob's Red Mill)
1 can vegetable broth
1 can diced tomatoes seasoned with chilies
1 tsp minced garlic
small can corn or mexi-corn
1/2 red onion, chopped & sauteed
1 jar of your favorite salsa
polenta (optional)
1 avocado (optional)

Soak beans overnight according to instructions. Strain. Add all ingredients except polenta & avocado to crock pot. Simmer for 8-9 hours.

Slice polenta, warm it in pan or microwave & stack- polenta/bean mixture/polenta/avocado/bean mixture. Enjoy with tortilla chips. 

Of course, if DF GF Vegan is not a concern for you, (luckyyyy) by all means, add cheese!
